The following chart explains why fruits and vegetables are the foundation of the Modified Food Pyramid.  The blue line reports the amount of carbohydrates in each food.  The yellow and red lines report the direction of change, upward.  The amount of carbohydrate in the fruits and vegetables is generally less than that in the grains.  That means that the grains will be used to produce a higher level of blood sugar (glucose) than the fruits and vegetables.  It is generally better to keep fresh blood sugar at a lower rather than higher rate of influx.  Coincidentally, the new food pyramid is somewhat consistent with the Atkins diet.  (The graph may take a while to load.)
